My Top 3 Hello Fresh Recipes

Since moving into my first home back in March, I have had countless deliveries from the fresh food subscription service 'Hello Fresh'. While I did manage to keep on track of my delivers and choose my own recipes (rather than them randomly select options), there were still a handful that were so-so. But there are more good than bad ones. Here are my top 3 recipes from the last six months:

Mango Chutney Glazed Chicken 

This has been remade more times than I can count on both hands! The finished dish consists of a succulent chicken breast cooked with the skin on to give it a lovely crunchy texture, fried and roasted in a marinade of passanda seasoning and olive oil and finally topped with mango chutney. This is served on a bed of fragrant cumin bulgar wheat with red onion and garlic with a side of sweet roasted carrots and drizzled with garlic and mint yoghurt. 

The whole meal is full of flavour, with a mix of Indian and Middle Eastern flavours with the passanda seasoning and mango chutney and then the cumin bulgar wheat and minty kicks. Two of my favourite cuisines. 

This recipe is incredibly easy to recreate. The only ingredients that I swapped were the chicken seasoning which I swapped for korma and If I'm feeling lazy or rushed for time then instead of making the bulgar wheat I will just go for one of those easy cous cous packets that you add water too. Still just as delicious.

Bacon, Chilli and Butternut Squash Rissotto 

Risotto used to be something that I was always scared of making. I remember quite a few years ago I made a recipe similar to this and it took me about 3 hours and the rice was still hard as a bullet. But since starting Hello Fresh I have found myself going for multiple risotto recipes and even remaking them myself. And they actually go right. 

This recipe is so comforting. The smoky bacon mixed with the sweet butternut and then the little kick of chilli is just such a lovely combination. And of course the parsley gives it that lovely, familiar fresh taste that you get with most risotto dishes. What really brings the whole meal together is the masses of parmesan and the lovely squeeze of lemon. It's just bursting with flavour and leaves you wanting more and more. 

When I remake this dish, I use arborio rice, diced smoked bacon medallions and I add peas for more veggie goodness. It comes out perfect every time and I think this will be one of those staple recipes that I always go back to.

Mexican Style Roasted Sweet Potato Salad

I tried this recipe just last week! I ordered it whilst we were having a mini heatwave and thought "That will be nice to eat in this weather" and still put off making it as I didn't fancy a salad. But it's the kind of salad that doesn't feel like you're eating a salad because it's bulked out with more interesting vegeteables than the standard. 

The dish consists of roasted sweet potato cooked in Mexican spices, baby gem lettuce, avocado, bell pepper and red onion mixed in with a lovely dressing made from honey, olive oil, coriander and lime. It's then combined with freshly made chunky garlic croutons and topped with crumbled feta. I was completely shocked at how nice this was and surpasses all the pasta and curry dishes combined. 

I haven't yet remade this, but when I do I think I will try and stick to the ingredients stated on the recipe as nothing is very obscure. The only thing that I may alter is the croutons. I may make it with less croutons or simply buy some ready made ones for convenience.
